5-Ingredient Broccoli Cheese Soup

Recipe

Prep Time: 5 minutes

Cook Time: 25 minutes

Serves: 2-4


Ingredients

  • 3 cups chicken or vegetable stock
  • 2 cups chopped broccoli florets, fresh or frozen
  • 1 small white onion, diced (about 1 cup)
  • 1 (15 oz.) can evaporated milk
  • 2 cups shredded sharp cheddar cheese
  • plus a few generous pinches of salt and black pepper
  • (optional: a few generous pinches of Italian seasoning or Cajun seasoning)


Directions

  1. Stir together stock, diced onion and broccoli in a medium saucepan. Heat over medium heat until it comes to a low boil.
  2. Reduce heat to  medium and continue boiling for about 5 minutes, or until the onions are  tender. 
  3. Stir in the evaporated milk and continue cooking for 3 minutes or until the mixture returns to a simmer. 
  4. Remove from heat and stir in the cheese until melted.
  5. Season soup with salt and pepper to taste. Serve warm.

Don’t have evaporated milk? No worries! For this recipe, substitute:

  • 1 2/3 cups half-and-half
  • OR 1 2/3 cups heavy cream
  • OR 1 2/3 cups of whole milk
  • OR 3 cups milk simmered until reduced to 1 2/3 cups (richer flavor)

Cottage Cheese Pancakes

Cook Time: 10 minutes


Ingredients

  • 1 cup cottage cheese
  • 1/3 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 3 eggs, lightly beaten
  • cooking spray


Directions

  1. Combine cottage cheese, flour, oil, and eggs in a large bowl.
  2. Heat a large skillet  over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of  batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Grilled Cheese Sandwich

Recipe

Step 1: Choose Your Cheese

A great grilled cheese sandwich starts with the cheese. Choose a cheese that's good for melting. Try American, cheddar,  monterey jack, colby-jack, mozzarella, provolone, muenster, swiss,  gruyere, or fontina. 


Step 2: Choose Your Bread

White, wheat, rye, pumpernickel—sliced bread is your base for making crispy grilled cheese sandwiches. Slice bread 1/2 inch thick. Be sure to keep slices even and similar in size for even browning.


Step 3: Assemble the Sandwich

  • Top one slice of bread with desired cheese. Plan on 1-2 slices of cheese per sandwich. 
  • Place bread slices together, cheese in the middle.
  • Brush both sides of the sandwich with olive oil or butter. 


Step 4: Cook the Grilled Cheese

Heat a large skillet or griddle over medium heat. If desired, add 1 tablespoon of butter and heat until butter melts. Add sandwich to skillet and cook about 2 minutes or until bottoms are golden. Flip and repeat until bottoms are golden and the cheese melts. (Adjust the heat  as necessary to prevent over browning.)
